How to harvest
pepper seeds.

A green pepper is an unfinished pepper, and the seeds inside it are unfinished too. Scrape them onto a plate tonight and close to none of them will come up. Leave that same pepper whole on the counter for two weeks and most of them will. The waiting is the whole job.

Step zero

Green is a picking stage, not a finished pepper

You are not looking at the pepper to decide whether it is good to eat. You are looking at it to decide whether the seed inside has finished forming.

The one thing to do

Do not cut it yet. Take the pepper out of the fridge, sit it whole on the counter out of direct sun, and write today's date on a scrap of tape beside it. Come back in two weeks.

Open it now

  • The skin has turned red, orange, yellow or brown, whichever is the finished color for that variety.
  • The color covers most of the fruit, not one shoulder.
  • The gloss has dulled and the wall gives a little when you press it.
  • It has sat at room temperature for at least a week since you brought it home.
  • Press one seed with a fingernail. It is firm, flat and straw or tan colored.

Leave it whole

  • It is still fully green with no blush anywhere.
  • It is glossy, hard and heavy, the way a supermarket pepper is on day one.
  • It came out of the fridge this morning.
  • You bought it today.
  • The seeds are white or pale and slightly soft, and they bend under a fingernail instead of splitting.

The seed itself is the better test, and it costs you one pepper to learn it. A finished pepper seed is flat, hard and the color of straw. It splits cleanly under a fingernail. An unfinished one is paler, softer and a little see-through, and it dents rather than splits.

Once you have seen the two side by side you can call it in a second for the rest of your life.

Almost every green bell pepper is a red one picked early. Same plant, same fruit, taken at a stage that ships better and lets the plant set more fruit. A few varieties really do finish green, but if you bought it in a supermarket it was almost certainly on its way to red.

The decision

Why the pepper has to stay whole

Before reading on, take a guess at what happens to seeds cut out of a green pepper and then dried perfectly on a plate. This is the one place where the sensible answer turns out to be wrong.

Here is the fork. You have a green pepper on the board. Is the seed in it alive?

Answer one: it is alive. A seed is a seed. Dry it properly and it keeps. If that is true, you can harvest tonight and be finished in ten minutes.

Answer two: it is not finished yet. The seed is still being filled by the fruit, and cutting it out ends that early. If that is true, then careful drying does not save you, because you dried something that was never going to sprout.

What decides it is time, not technique. The answer is two, which is why this guide is mostly about waiting.

The clearest test of it was run on four bell pepper varieties at the Louisiana Agricultural Experiment Station. Seed taken straight out of mature green fruit did not germinate at all, no matter how it was stored afterwards. The same seed, left sitting inside the picked green fruit for up to fourteen days before being taken out, germinated significantly better in every variety they tried. Sanchez and colleagues published it in 1993, and the full reference is at the bottom of this page.

A later study on immature pepper seed found the same shape of result. Seven days resting inside the picked fruit took germination from 28 percent up to 76 percent in one growing system, and from 54 percent up to 88 percent in the other.

The two studies disagree about how bad green-stage seed is to begin with. They agree completely about the fix.

Say out loud, before you scroll, why the seeds have to stay inside the pepper rather than dry on a plate. If the sentence you come up with is about the fruit still feeding them, you have it.

What the counter can and cannot do

Be honest with yourself about the ceiling here. A pepper is non-climacteric, which means it does not keep ripening off the plant the way a tomato or a banana does. Some peppers color up beautifully on a windowsill. Plenty just sit there and slowly wrinkle.

The seed work carries on either way, and that is the part you care about. You are not waiting for a red pepper. You are waiting for a finished seed, and you can get one without ever getting the color.

The fridge is what stops it. Bell peppers keep longest at around 45°F, and below that they take chilling damage, with discoloration of the seed cavity as one of the signs. Green fruit is the more cold sensitive stage. A pepper that has been cold since the truck has not been maturing anything, which is exactly why the counter rest is worth two weeks.

The benchmark

Left on the plant until fully colored and just starting to wrinkle. Highest germination, strongest seedlings, and nothing for you to do. If you grow peppers, give up one fruit on one plant to this and you never need to buy pepper seed again.

The kitchen version

Worse than the benchmark and far better than scraping it out tonight. Expect a real germination rate rather than a great one, and sow thicker to cover it. This is the version most people are actually doing.


The job

Rest, open, scrape, dry

Ten minutes of hands-on work with two long waits built around it. Neither wait can be hurried, and both of them are just leaving something alone.

  1. Rest the whole pepper for two weeks

    Out of the fridge, out of direct sun, somewhere around normal room temperature. A kitchen counter or a shelf is right. Sixty five to seventy five degrees is the sweet spot.

    Leave it whole. No cutting, no piercing, no bag. Write the date beside it, because two weeks is exactly long enough to lose track.

    If a soft brown patch starts anywhere, open it that day and take what you have. A pepper going over is finished maturing seed anyway.

  2. Cut a circle around the stem and lift the core out

    Run a small knife in a ring around the stem, an inch or so out, then pull the stem straight up. The whole white core comes with it, seeds still attached.

    This beats halving the pepper. Cut it in half and you slice through seed and scatter the rest into the flesh you wanted for dinner.

    The pepper is still perfectly good to eat. Saving the seed costs you nothing but the two weeks.

  3. Thumb the seeds off onto a dry plate

    Dry hands, dry plate. Rub them off the core with a thumb and let them fall.

    Do not rinse them and do not soak them. Pepper seed needs neither, unlike tomato seed, and every drop of water you add is water you spend the next two weeks taking back out.

    Pick out any bits of white core that came along. They hold moisture longer than the seed does.

    Picture the plate you would actually use for this, and where in the house it can sit undisturbed for two weeks. That is the only planning this job needs.

  4. Dry them one layer deep for one to two weeks

    Spread them so no seed touches another. A plate, a coffee filter or a fine screen all work. Out of the sun, room temperature, never above ninety five degrees.

    No oven, no dehydrator, no sunny windowsill. Heat kills the embryo and you will not be able to tell by looking.

    Stir them with a finger once a day so nothing sits damp underneath.

  5. The snap test decides when they go in the jar

    Take one seed and bend it. A dry seed snaps in half cleanly. A seed that still holds moisture folds instead.

    If it bends, give it another three days and test a different one. This is the only check that matters before storage, and skipping it is how a jar of seed turns to mold in November.

  6. Label and store

    Paper envelope first, then a sealed glass jar, then somewhere cool, dark and dry. A fridge is the best spot in most houses. A sachet of silica gel in the jar takes out whatever is left.

    On the envelope: what it was, where it came from, and the date. In March you will not remember, and an unlabeled envelope is a bag of mystery.

    How long it keeps depends on who you ask. The University of Minnesota Extension says use it within one year. Seed Savers Exchange says up to three years stored cool and dry. Treat the first spring as the good one and test anything older.

The skill

Finding out whether they are alive

How much of a bed would you be willing to plant on seed you have not tested? For kitchen pepper seed the honest answer is none, and the test costs ten seeds and a paper towel.

By eye first. Keep the ones that are plump for their size, firm, flat and evenly straw colored. Bin the ones that are papery white, see-through at the edges, shrivelled, or that dent under a fingernail instead of splitting. A dud is obvious next to a good one and invisible on its own, so sort them together on a white plate.

Then the towel test. Count out exactly ten. Lay them on half a sheet of damp kitchen towel, fold it over, and slide it into a sandwich bag left slightly open. Put it somewhere genuinely warm. Peppers want around eighty to eighty five degrees to germinate, and a cool room is the most common reason people decide their seed is dead.

Then wait longer than feels right. Peppers are slow. Look at seven days, but do not call it until twenty one. Multiply the sprouts by ten and that is your rough germination rate.

Six out of ten is a fine result from a rested green pepper. Sow thicker to cover it and carry on. Zero out of ten is worth knowing in February rather than in May.

The catch

The plant you grow will not be this pepper

Worth reading before you plan a bed around it, and especially if the pepper came from a shop.

Most supermarket bell peppers are F1 hybrids. That means each one is the first cross of two carefully kept parent lines, and every fruit in the crate is identical because the same cross is made again every year.

Seed from an F1 gives you the generation after that, and that one splits. Traits from both grandparents come back in every combination. You will get peppers. You will not get that pepper, and no two of your plants will match.

A garden pepper is a different story. Peppers are mostly self-pollinating, so seed from an open-pollinated variety comes back true. California Wonder, Corno di Toro and Habanero are three that the University of Minnesota Extension names as reliable. Save from one of those and you have a variety you can keep forever.

Bees will still mix them

Mostly self-pollinating is not entirely self-pollinating. Bees do move pepper pollen, and sweet peppers and hot peppers cross freely.

Here is the part that surprises people. If a hot pepper pollinates your sweet one, this year's fruit is still sweet. The seed inside it is the cross. The heat turns up next year, in the seedlings, long after you have forgotten which plants were neighbors.

Seed Savers Exchange puts the isolation distance at 300 to 1,600 feet, or bagging individual blossoms by hand. That is not a home garden number. For a home garden the real options are to grow one variety, or keep the sweet and the hot at opposite ends of the yard and accept some drift, or bag a few flowers on the one plant you actually want to save from.

Picture next spring's two pepper plants and where in your yard each one would sit. That decision is the whole isolation problem, and you can make it now, before you have bought anything.

None of this is a reason not to save

  • Want that exact pepper again? Buy seed of a named open-pollinated variety once, then save from your own plants every year after.
  • Want free seedlings and do not mind a surprise? Save from the shop pepper. It costs a plate and two weeks, and a mystery pepper is still a pepper.
  • Want to know before you commit? Towel-test ten in February. Ten seeds and ten minutes buys you the whole answer.
